I’m posting a really easy recipe for roasted Brussels sprouts with an even easier peanut sauce but I’m well aware that 99.99% of anyone who looks at this post will skip the sprouts and get right to the puppy pictures.
I’m with ya. I really am. I haven’t spent much time in the kitchen since we got this little bundle of joy.
He is doing really well with house-training and can now sit & stay. He’s really good at going on hikes but walks around the neighborhood have way too many distractions! He’s quite the big man when we go on hikes. He runs fast and carries sticks in his mouth. Such a boy! He’s always eating bugs (ok, I taught him how to kill bugs for me) & digging in the dirt.
We are starting puppy obedience class this weekend which I’m really looking forward to!
He is growing like a weed too! I swear every time he wakes up from a nap he’s bigger. He has almost outgrown the first collar I got him so I got him this stylish puppia harness. Camo is definitely his color, plus it’s super in fashion right now…or so I’ve heard 🙂
He spends most of his waking hours outside and loves laying in the grass.
Speaking of camo and fashion. Look at this model face.
Oh and his lamb! He loves this lamb.
And now for anyone who is interested in Brussels Sprouts…
I got on a major Brussels Sprouts kick last week and at them almost every night for dinner. Super easy and quick to prepare and obviously, very healthy. On a side note, I really like Brussels Sprouts! I would much rather eat a pile of sprouts than a pile of broccoli any day.
Roasted Brussels Sprouts
Preheat oven to 375˚F and line a baking sheet with parchment paper. Remove the ends of the Brussels sprouts (as many as you feel like making) and cut into halves or quarters (I prefer quarters). Place the sprouts in a bowl and drizzle with a small bit of olive oil and either soy sauce or balsamic vinegar (both ways are good). Use your hands to mix everything up.
Spread the sprouts on the prepared baking sheet and bake in the oven until browned and tender, stirring once or twice.
Lazy Peanut Sauce
1 tablespoon peanut butter
1-2 tablespoon water
1 teaspoon tamari
Place all ingredients in a microwave safe bowl. Microwave for 10 seconds and stir until smooth.
Easy huh? If it’s too thick add a little more water.
