Zucchini Pizzas

Happy Wednesday! I can’t believe it’s the end of June already. What I also can’t believe is that the first day of summer was just 4 days ago and Target already has all their outdoor/summer things on clearance! What is up with summer things being on clearance when it’s just barely the start of summer?! It’s because they have to make room for back to school items, that’s why! It was a tad depressing, but I love clearance prices so I got over it quickly.

Here is a very summer-y recipe! I got this idea from Pinterest last winter and I’ve just been waiting for grilling season to try it out. On a side note, for every 100 recipes I pin on Pinterest I probably actually make 1. Then I go back and look at my recipe board and wonder why I pinned a 10 layer funfetti cake…

These Zucchini pizzas are easy, delicious, healthy and perfect for a summer barbecue!


Grilled Zucchini Pizzas
Olive oil
Pesto sauce
Toppings as desired

Start by peeling the zucchini and then slicing it long ways into thin “pizza crusts”. I then cut the zucchini strips in half to make them easier to handle. Lightly brush both sides with olive oil and grill each side for several minutes until the zucchini is cooked and has nice grill marks on it.
Top with pesto sauce, or other sauce of your choice and top with whatever you want! Sun dried tomatoes, olives, cheese, vegan cheese, whatever you can think of!
Carefully place the zucchini “pizza’s” back on the grill to warm the toppings. I used a vegetable grilling tray so that I wouldn’t drop any zucchini in the grill which tends to happen!

And now for the important stuff-Rocco updates!
Rocco is doing amazing! He is turning into such a well behaved, balanced puppy. He really had a break through in his potty training last week and it’s like it suddenly clicked for him. He now not only asks to go outside, but hurls his body at the back door so that it makes a really loud crashing sound when his body hits the blinds. I also hung a little bell up for him to ring but he prefers full body contact with the door.
He did so well at puppy school Saturday too. He was way ahead of the curve because he already knew his name and knew how to sit.
Now he knows sit, stay & come!
The other day I got him all suited up for his walk but he got too sleepy to walk. When this guy gets sleepy there is NO waking him up.

I tried waking him up and he covered his eyes/nose. Point taken.

Now I’m trying to teach him a very important lesson: how to sleep in. We still have a ways to go but I think he’s catching on! 🙂


Brussels Sprouts with Peanut Sauce and Rocco Pics

I’m posting a really easy recipe for roasted Brussels sprouts with an even easier peanut sauce but I’m well aware that 99.99% of anyone who looks at this post will skip the sprouts and get right to the puppy pictures.

I’m with ya. I really am. I haven’t spent much time in the kitchen since we got this little bundle of joy.

He is doing really well with house-training and can now sit & stay. He’s really good at going on hikes but walks around the neighborhood have way too many distractions! He’s quite the big man when we go on hikes. He runs fast and carries sticks in his mouth. Such a boy! He’s always eating bugs (ok, I taught him how to kill bugs for me) & digging in the dirt.

We are starting puppy obedience class this weekend which I’m really looking forward to!

He is growing like a weed too! I swear every time he wakes up from a nap he’s bigger. He has almost outgrown the first collar I got him so I got him this stylish puppia harness. Camo is definitely his color, plus it’s super in fashion right now…or so I’ve heard 🙂


He spends most of his waking hours outside and loves laying in the grass.


Speaking of camo and fashion. Look at this model face.


Oh and his lamb! He loves this lamb.


And now for anyone who is interested in Brussels Sprouts…

I got on a major Brussels Sprouts kick last week and at them almost every night for dinner. Super easy and quick to prepare and obviously, very healthy. On a side note, I really like Brussels Sprouts! I would much rather eat a pile of sprouts than a pile of broccoli any day.

Roasted Brussels Sprouts
Preheat oven to 375˚F and line a baking sheet with parchment paper. Remove the ends of the Brussels sprouts (as many as you feel like making) and cut into halves or quarters (I prefer quarters). Place the sprouts in a bowl and drizzle with a small bit of olive oil and either soy sauce or balsamic vinegar (both ways are good). Use your hands to mix everything up.
Spread the sprouts on the prepared baking sheet and bake in the oven until browned and tender, stirring once or twice.

Lazy Peanut Sauce
1 tablespoon peanut butter
1-2 tablespoon water
1 teaspoon tamari
Place all ingredients in a microwave safe bowl. Microwave for 10 seconds and stir until smooth.
Easy huh? If it’s too thick add a little more water.

Pictures & Stories

Right now I’m not really capable of talking about or thinking about anything other than Rocco, so I’m not even going to try! I’ll just share a bunch of pictures and stories instead.
First off, here is a picture of my new garden!

I got it from Costco and my sweet, sweet parents installed it for me! They know I don’t really enjoy digging in the dirt or making dirt level and they actually do enjoy that kind of thing so they did it for me! I feel like such a spoiled brat for writing that. Thank you parents. Thank you.
I’ll tell you who else enjoys digging in the dirt…Rocco!! He’s actually pretty good about leaving the garden alone except there was this one night…
I decided Rocco would do well with a mellow evening activity like chewing on a sweet potato rawhide. You know, the ones that look like a big sweet potato fry but it’s just dehydrated sweet potato. I want to eat them they look so good. Well he thought it was good too and ate the whole thing! 10 minutes later he had a sugar high and was literally bouncing off the walls! He jumped in the garden and bounced around like a pin ball machine! It was too funny. Needless to say he hasn’t gotten one of those sweet potatoes since.

Rocco’s most favorite thing to do is play with his toys and tennis balls under the couch. He lays on his back and goes nuts! It’s impossible to photograph, so here is a really blurry picture of this mini-maniac. He went to the vet and weighed in at 4.5 pounds by the way.


Last night I gave him a bath, which he really didn’t care for. Afterward he was freezing since he has no body fat so I taught him how to sunbathe!


He also really loves going to the Point of the Mountain Flight Park with me to watch my husband paraglide. He is going to be the best little flight park buddy! He got cold and sleepy so luckily I always have a blanket on hand for such emergencies.


My other interests at the time include binge watching Breaking Bad (we are on season 4 I think) and watching Mistresses, haha! That show is such a soap opera but I’m happy it’s back this summer.

Introducing Rocco!

I have so many stories to share, like that yesterday was our 1 year wedding anniversary! I can’t believe it’s been a year already! And we just got back from a 9 day trip to Oahu. Life is rough…
But first I want to just get right down to the good stuff and share pictures of our new puppy, Rocco!

We just got him Sunday night so we are still working on getting into a routine but it’s been amazing how much he has transformed in just a few days.

He already loves playing fetch. He has mini tennis balls and he likes to play fetch very first thing in the morning.

He is already going on walks on a leash too! The first time out was a little, uh…slow. But now he can jog on the leash a little.

He is so fun!

This was taken early in the morning so yes, those are my legs and my pink bathrobe. He is standing so proud.

But then he got a little chilly so I wrapped a scrap of t-shirt around him and he liked that. He was very focused on watching the birds on our back hill. He is showing signs of being quite a hunter.

But then he got sleepy and wanted to be held. Years from now he will deny that this ever happened.

He loves playing under the couch. He thinks it’s hilarious to play with his toys under there. That is an awfully cute little bum.

My mom brought him his first stuffed animal which is actually one I had as a kid. He really likes wrestling with it.*

He has his own Instagram account. His user name is rocco_the_minpin (Rocco James) if you would like to follow his daily posts. He has like 6 followers so he’s a pretty big deal, haha!

And so far potty training has been a cinch (for me anyway). That’s because my husband works from home and has been doing all the work including getting up in the night. He is the best doggy daddy and husband!
