I have a hard time naming these little guys. They are one part no-bake cookie, one part healthy, energy treat. They are pretty much a no-bake cookie doing its best to be healthy and they are DELICIOUS! If you are going biking, hiking or skiing you do not want to be without these little bundles of joy. Oh, and they only require one mixing bowl and it only takes a few minutes to make them. WINNING!!

Ingredients:
1 cup regular oatmeal
1 cup shredded coconut
1/2 cup ground flax seed
1/2 cup mini chocolate chips
1/2 cup creamy peanut butter
1/3 cup honey or agave nectar
1 teaspoon vanilla extract
In a large mixing bowl combine all the dry ingredients. Add the peanut butter, honey/agave and vanilla extract and stir to incorporate everything. Refrigerate the mixture for about 30 minutes (or don’t). Line a baking sheet with parchment paper. Roll the mixture into balls and place on the baking sheet. Store in the fridge or freezer. Makes about 20 balls.
