Ingredients:
3/4 cup vegan butter
1 1/2 cups creamy peanut butter
1 1/2 cups very fine graham cracker crumbs
1 cup regular white sugar
1 12oz bag vegan chocolate chips (2 cups)
1/4 cup almond or soy milk
1 teaspoon vegan butter or coconut oil
Melt the butter in a medium sized sauce pan over medium low heat. Add in the peanut butter, graham crackers and sugar. Stir well until the peanut butter is melted and the mixture is smooth. Pour the mixture into a 9×9 or 8×8 baking pan. place the pan in the freezer or fridge and allow it to get very firm.
Once the peanut butter layer has firmed up start making the chocolate topping. Heat 1/4 cup nondairy milk and 1 teaspoon butter/coconut oil in a small saucepan over low heat. Add the chocolate chips and stir until you have a smooth chocolate sauce. Be careful not to burn it! Pour the chocolate over the peanut butter layer and put the pan back in the fridge or freezer to firm up. Done! You can start eating them just as soon as they are firm. Store them in the fridge and enjoy 🙂
